OUR STORY

From War-torn Soil to Washington Pasture: A Story of Loss, Legacy, and Land Reclaimed.

I was nine years old when my life changed forever. My parents and I boarded a plane with only a few bags in our hands and a fragile hope in our hearts—that in America, we would find not just safety, but a future.


We were fleeing the civil war in Nicaragua. But in truth, we were also leaving behind the ashes of a dream.


Before the war, my grandfather was a proud landowner—a rancher, a farmer, a man deeply connected to the land. His fields stretched wide, filled with cattle that roamed freely and crops that nourished not only our family, but many others. That land was more than a livelihood. It was identity. It was history. It was legacy.


Then, one day, everything changed.


Armed men arrived at his farm, rifles in hand and threats on their lips. They gave him a choice no one should ever have to face:
“Leave everything… or lose everything.”


In a single moment, generations of hard work were taken away.


They stole the cattle.
They seized the land.
They shattered my grandfather’s life’s work.


But they didn’t destroy the dream.


They only buried it.


And the beautiful thing about a buried seed… is that it doesn’t die.


It waits.

A Seed Replanted

 

In the United States, my father was granted political asylum, and our family was given the opportunity to begin again. We started with very little—no land, no livestock—only hard work, sacrifice, and quiet prayers that one day we might rebuild.


As I grew older, so did something within me—a deep sense of connection to where we came from. It began as a quiet whisper, a faint memory I couldn’t fully explain, but over time, I came to understand it through my family’s story. That whisper took root, grew into a seed, and eventually became a dream: to reclaim what had been lost and return to the land—not simply to own it, but to care for it, restore it, and give it purpose.


At 40 years old, I was grateful to see that dream become reality when I became a landowner in Enumclaw, Washington. But for me, it has never been just about ownership. It’s about honoring the land, stewarding it with intention, and living in a way that reflects those values. My hope is to raise animals, grow food, and nurture my family in a way that makes a meaningful impact—not only for today, but for the five incredible girls who call me Dad.

From Survival to Stewardship

Liberty Harvest Collection isn't just a farm-it's the rebirth of a family legacy.


Here, we raise pasture-based beef, pork, poultry, and turkeys using rotational grazing methods inspired by Joel Salatin. We grow no-till vegetables, rich in nutrients and flavor, without ever disturbing the living soil below.


We don’t rely on chemicals, and we don’t take industrial shortcuts. Instead, we work in step with nature—guided by its rhythms and grounded in the values of a family that once lost everything, and is committed to never losing it again.


Every animal we raise, every vegetable we grow, and every inch of soil we care for reflects that commitment. It’s our way of honoring what was lost, while thoughtfully rebuilding and protecting what has been reclaimed.

This is Liberty

Liberty, for us, means more than a name.


It means freedom from the systems that poison our food and pollute our land. It means freedom to grow with integrity, to teach our children where real food comes from, and to serve our community something better than convenience-it means truth.


Our mission is simple: Regrow what was lost. Reclaim what was stolen. Restore what was broken. We're doing that with every harvest, every box, every honest meal.


This is the American Dream, planted deep in the soil of sacrifice and watered with perseverance. And now it's bearing fruit-not just for us, but for everyone who believes in food that's real, families that endure, and freedom that grows from the ground up.
